Salted Cod Fish Flitters

Salted Cod Fish Flitters

What you will need

6 oz salted cod fish

1 cup spelt flour

1/2 cup water

1 large tomato, chopped

1/2 teaspoon baking powder

1/2 teaspoon red pepper flakes

2 green onion, chopped

If you may

Scotch bonnet pepper

Thyme (i cannot cook without thyme)

Soak salt fish by giving it a hot water bath for five min then a cold water bath for five min, i do this 4 times and then i clean and break the salt fish apart. If it’s still too salty pour some hot water and let sit for 5 min.

Add all of the above together and mix

Heat oil and then scoop up a tablespoon full of batter and place in oil and fry for 5 min on each side, and then place on paper towel to drain out the excess oil.
